These silvery, green leaves give an earthy and slightly spicy flavour and a slightly musky aroma. The strong taste of sage features heavily in English cooking, particularly used in stuffings, sausages, casseroles and stews. In Mediterranean cooking it is used in tomato and cheese based dishes.
